Zucchinis

Zucchinis

Hi
I'm fairly new to preserving (but helped my Mum bottle fruit with the Fowlers Vacola water bath back when I was at school in the 70s).

We have a couple of massive zucchinis in the garden and we are wondering what to do with them.

I do have a pressure canner and mason jars. But I was thinking zucchinis would turn to mush. Our current thought is grating them up and freezing in small zip lock bags. What about pickling them in a vinegar solution? And if you do that, what can you use the pickled zucchini for afterwards?

I might only plant 2 zucchinis next year lol
